This is a 1-1-2 ratio cookie (1 part sugar, 1 part fat, 2 parts flour), and will therefore be soft but will not spread when baking.<\/em> <em>This recipe makes about a dozen cookies.<\/em><\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>60g Sugar Substitute (<a href=\"https:\/\/www.wholesomeyumfoods.com\/shop\/sweeteners\/monk-fruit\/monk-fruit-allulose-blend\/\">Besti Allulose\/Monk Fruit<\/a> recommended)<\/li>\n\n\n\n<li>60g Ghee<\/li>\n\n\n\n<li>1 TBSP Water<\/li>\n\n\n\n<li>1\/2 tsp Vanilla extract<\/li>\n\n\n\n<li>1 tsp Almond extract<\/li>\n\n\n\n<li>100g <a href=\"https:\/\/www.carbmanager.com\/food-detail\/md:6f6661b0e79e2cf8d9da0efc9b3fadf0\/carbalose-flour\">Carbalose<\/a> flour<\/li>\n\n\n\n<li>20g Almond flour<\/li>\n\n\n\n<li>Raspberry Jam (<a href=\"https:\/\/www.choczero.com\/products\/keto-raspberry-jam-sugar-free\">ChocZero Raspberry<\/a> recommended)<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Combine the water, vanilla, and almond extract into a small bowl<\/li>\n\n\n\n<li>Cream the sugar into the Ghee<\/li>\n\n\n\n<li>Blend the water and extracts into the creamed sugar<\/li>\n\n\n\n<li>Blend in the flours until fully incorporated<\/li>\n\n\n\n<li>Shape the dough into a small cylinder (the wider you make the cylinder, the larger but fewer cookies you will end up with), and wrap it in plastic wrap or equivalent<\/li>\n\n\n\n<li>Place the dough in the freezer to firm up (~10 minutes)<\/li>\n\n\n\n<li>Preheat the oven to 350F (or 325F if using convection)<\/li>\n\n\n\n<li>Cut the dough into slices (cutting across the long axis, so that you end up with many small discs rather than a few long oblongs).<\/li>\n\n\n\n<li>Placing each slice onto a firm surface (cutting board or plate), gently press down in the center with your thumb, while using your other hand to help the disc hold its shape and not split<\/li>\n\n\n\n<li>Using a spoon, fill the indent with the raspberry jam, and place on a baking sheet<\/li>\n\n\n\n<li>Bake the cookies for ~12-14 minutes. The cookies are done (but will be soft) when the top edges are just browned.<\/li>\n\n\n\n<li>Let cool.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>A low carbohydrate (although not necessarily low calorie) cookie.
